Olive Oil Grades
Premium Extra Virgin olive oil is the finest quality available–and most expensive. With the lowest acidity, it is best in uncooked dishes where its delicious flavor and aroma can be appreciated.
Extra Virgin is also made from the first pressing of olives with a rich fruity flavor and only slightly more acidity. It is also best used uncooked to be fully enjoyed.
Fine Virgin Oil is a first–press oil with an acidity level of no higher than 1.5%. It is less expensive than extra virgin oil but is close in quality and taste uncooked. Chemicals and high heat are not allowed in the production of extra virgin or virgin oils.
Virgin Oil must be less than 2% acidity and cannot contain any refined oil. It is good for cooking but has enough flavor on its own.
Olive Oil and Pure Olive Oil are further processed refined blends generally containing 85% refined and 15% virgin or extra virgin to impart a little flavor and aroma. Oils in this grade are used in foods labeled, “packed in olive oil.” They withstand heat well and are best used for cooking.
